Did you know that if you brought your lunch to work everyday rather than going out, you can save about 2000$ per year! That’s the cost of trip right there. Now you’re going to tell me you don’t have time to prepare lunch. For that reason, I compiled my FAVORITE 5 lunch recipes that can be prepared in less than 5 minutes.
1 – Chicken tacos
Always keep some leftover chicken for lunch the next day. Recipe (2 tacos): 2 small corn or whole wheat tortillas, 3 oz shredded chicken, 1/2 bell pepper sliced, 1/4 avocado sliced, cilantro and your favorite salsa or hot sauce (I used Sinai Gourmet Maple Jalapeno). Serve with raw veggies or salad on the side!
2 – Salad with feta & roasted chickpeas
Just grab 2 cups mixed salad, throw in 1/2 cup of your favorite veggies, 1/4 cup diced feta (or other cheese), 1 tbsp dried cranberries and top it off with 1/3 cup roasted chickpeas, either homemade or storebought. Use an olive oil and red wine vinegar dressing.
3 – Edamame stir-fry

Ready in 5 minutes: Heat oil and garlic in a skillet. Add 1/2 cup frozen shelled edamame, 1/2 cup frozen broccoli, 1 tbsp peanut butter, 1 tsp soy sauce, and your favorite hot sauce. Serve with leftover noodles or rice.
4 – Mayo-free tuna sandwich
Mix 1 small can of tuna with 1/4 mashed avocado. For more flavor: add a few pieces of marinated artichoke, 1 tbsp lemon juice and 1 tbsp chopped parsley. Use your favorite bread.
5 – Tex-Mex rice salad
This is perfect for the leftover rice you have. To 3/4 cup rice, simply add: 1 tbsp balsamic vinegar, 1 tbsp olive oil, 1/2 tsp ground cumin, 1/3 cup black beans, 1/3 cup chopped tomato, 1/3 diced avocado , 1 tsp sliced green onions, and some cilantro.
